Santorini's Agriculture The special characteristics of Santorini: volcanic soil, climate, reduced rainfalls, lack of spring waters affects and gives some special characteristics to the agricultural products of Santorini. The lack of spring waters and the very low rainfall makes Santorini one of the driest places in the Aegean. The climate is temperate, the winters are mild (the temperature rarely falls below 10 degrees Celsius and the summer is also moderated by the northern breezes called Meltemia. Santorini's most important agricultural activity is the cultivation of vines and the production of wine. The wine of Santorini famous since antiquity was the island' s main source of income for many centuries. The varieties of grape are called asyrtiko, aidani, mantilaria and mavrotragano.
